Carrots are healthy. They impress with their high content of vitamins and minerals and can be used in a variety of ways. In the meantime, in addition to orange carrots, purple, yellow or red ones are also available. Their consumption is particularly recommended in the autumn and winter months.

Strengthen the immune system with carrots

Carrots are ideal for vitamin C intake in winter. Furthermore, the beets contain vitamins B1, B2 and E as well as the minerals potassium, calcium, phosphorus and iron. At the same time, they are low in calories. The mix of vitamins and minerals strengthens the immune system and helps prevent colds.

Healthy vegetable

Carrots are also rich in beta-carotene, which is converted to vitamin A when consumed with fat.

Vitamin A is an important component of the visual pigment rhodopsin. This is why some people also assume that carrots are good for the eyes.

Because they are particularly low in acid, experts say they are well suited for natural dental care.

Versatile use

Carrots do not always have to be orange in color. Meanwhile, purple, yellow or red carrots are also commercially available. This is indicated by the Provincial Association of Rhenish Fruit and Vegetable Farmers (Bonn).

“The variety of colors in the carrot varieties, which has only been rediscovered in recent years, ensures variety and color on the plate. The different colored varieties do not differ in taste. But they are a real eye-catcher, ”writes the association.

The uses of carrots are extremely diverse: raw as a snack, as a soup vegetable, as a vegetable side dish or in carrot cake.

"Especially in the autumn and winter months, freshly squeezed juice from carrots, other root vegetables and apples is ideal for doing something to prevent colds," said the provincial association.

Fresh carrots do not have to be peeled

Packaged in a foil bag, carrots can easily be stored in the fridge for several days.

However, they are also very suitable for freezing if an excessive amount has been bought.

Hobby chefs usually peel carrots before processing them, but this is not necessary for freshly purchased goods, as they have been washed just before they are sold.
