Delicious and healthy: autumn is endive season
Endives are commercially available all year round, but the focus of the offer is still in autumn. The delicious leaves are low in calories and rich in nutrients. They don't taste as bitter today as they used to. The vegetables stay in the fridge for several days.
Salad is mostly water
Salad is 90-95 percent water, but most varieties are tasty and healthy. One variety is endive: You can now buy it all year round, but it is primarily known as a classic autumn vegetable. Colloquially, endives are always assigned to the salad, but they are not related to the classic salads. This is indicated by the Provincial Association of Rheinischer Obst- und Gemüsebauer (Bonn). They belong to the chicory family and are closely related to chicory and radicchio.
Low in calories and rich in valuable nutrients
Endives only contain ten kilocalories per 100 grams and are therefore very low in calories. However, they are rich in healthy phytochemicals, among other things they contain many flavonoids, which are supposed to fight free radicals in the body.
In addition, endive scores in comparison to other salads with its content of vitamin C, some vitamins of the B group, as well as potassium, calcium and phosphorus.
The leaves used to have a slightly bitter taste, but breeding efforts have largely eliminated the bitter substances.
Endive can be kept in the fridge for days
Endives are usually cut into thin strips for consumption. Often the heads are too big for a small household to eat in a meal.
According to the provincial association, it is easily possible to break the head into small parts from the trunk. The rest can be kept in a plastic bag for several days in the refrigerator.
If endives are too bitter for you, you can put the leaves in warm water for a certain period of time to remove the bitter substances. However, this is only at the expense of the ingredients that stimulate our appetite and digestion.
A little sugar in the dressing also covers the bitter substances.
Endive not only in the salad
Since endives are very crunchy and can be stored for several days, they are often part of salad mixes.
But there are many more ways to conjure up tasty dishes from the delicious leaves. For example, endive can be prepared like spinach and then goes well with meat, fish or seafood.
